Black Soba Salad

Method
- Finely chop the spring onions
- Cut the broccoli in to bite size pieces
- Cut the pepper in to strips
- Sllice the courgette then cut in to thin strips
- Slice the salmon in to strips
- Boil the broccoli for 2 minutes to allow to soften
- Boil the rice noodles for 8 minutes
- Place the spinach in a colander, then pour the black rice noodles in to the colander allowing the hot water to pass through. This allows the spinach to soften with out boiling the nutrients out
- Run cold water through the colander to cool the noodles. Then put in the courgette, spring onions, pepper and broccoli, and mix thoroughly
- Serve into a bowl and top with the cold smoked salmon
- Finally mix the soy sauce and the lemon juice and pour over the meal to add zing
250g Black rice soba noodles
3 Spring onions
75g Broccoli
1/2 Sweet pepper (red, yellow, or orange)
1/3 Courgette
50g Spinach
120g Smoked salmon
2Tbsp Soy sauce
2tsp Lemon juice
