Ingredients

2 portions of Pasta

400g Mixed Vegetables, cut in to 3cm length and 1/2cm thick
This recipe has;

  • Carrots
  • Cucumber
  • Tomatoes
  • Red Pepper
  • Courgette
  • Spring onion

100-150g Smoked Salmon, Shredded or cut in to strips

1 Tbsp Soy Sauce

2 Tbsp Olive Oil

15g Vegetable Bullion

Alt;

Replace salmon with prawns, if not ready to eat boil or fry.

Method

  • While cooking the pasta chop the vegetables in to 3-4cm long by 1/2 cm thick and place in to a large bowl
  • Mix the Vegetable bullion, Olive oil and Soy sauce in a small dish. Once dissolved pour in to the vegetables and mix well
  • Once the pasta is finished drain off in a colander then run under cold water to cool the pasta
  • Place the pasta in to a the small bowl, add a pinch of salt and mix thoroughly
  • Place in to a pasta bowl and dress the salmon on top
  • Finish with a sprinkle of chilli flakes
