Summer Citrus Salmon

This summer citrus recipe is great for those warm days where you don’t want a heavy meal but want full impact flavour.
Method
- Lightly oil a pan and bring to a high heat
- Add the chopped garlic and allow to lightly brown
- Skin side down place in the salmon in to the pan
- When the salmon starts to brown and crisp, bring to a medium heat, turn over the salmon then add a pinch of salt and pepper.
- After 2-3 minutes sprinkle with the basil then serve
- Serve with with soft boiled then cooled broccoli and freshly cooked sticky rice
- Mix the soy sauce and the lemon juice in to a small sauce dish and use to add flavour to the meal
2 Fillets of Salmon
2 Cloves of Garlic, finely chopped
2tsp Chopped Basil
30ml Soy Sauce
30ml Lemon juice
