Chahan, also known as Yakimeshi, is a Japanese fried rice dish prepared with rice as a primary ingredient. The dish is typically fried, and can be cooked in a wok. Chahan may have originated in the 1860s from Chinese immigrants arriving at the port of Kobe. Chahan is a staple food in homes in Japan. A variation of the dish is kimchi chahan.
Additional ingredients can be used, such as vegetables, onion, garlic, edible mushrooms tofu, pork, seafoods such as crab meat, roe, salmon, shrimp and octopus, scrambled egg, ground beef and chicken broth, among others.Pre-cooked rice is typically used, and leftover rice is sometimes used. Oils such as canola oil, sesame oil and sunflower oil are used to fry the dish. The dish can be seasoned with soy sauce, oyster sauce, sesame oil, salt, pepper and katsuobushi, a dried and flaked tuna product
Method
- Prepare 300-400g of long grain rice, unless you have left over rice which is often used to make Chahan
- Start by finely chopping the spring onions and the mushrooms, then shredding half a lettuce.
- With high temperature, add 1Tbsp of sesame oil In to a wok or deep pan and place half of the spring straight onions in, then allow to heat up until sizzling
- Once you are able to smell the onions and sesame oil, crack the eggs and add both the white and the yolk, then mix well for 1-2 minutes
- add the mushrooms and continue to mix for another 3 minutes
- Add the rice and mix for a further 2 minute
- Finally the add the vegetable bullion, soy sauce and the lettuce then mix until it has become soft
- To serve, place and press quite firmly in to a bowl (about the size of cereal bowl). Place a plate on top of the bowl and then turn over. A little tap on the side of the bowl and lift the bowl off
- Side with some fresh cold tomatoes.
300-400g Long grain rice
1/2 a lettuce
6 Spring onions
3-4 Button mushrooms
2 Eggs
1Tbsp Vegetable bullion
2Tbsp Soy Sauce
chilli flakes to add flavour

Add any other vegetables or meats that prefer to taste. Sliced bacon or diced chicken are recommended
